Annual Foodservice Budget: $12.3 million

In her eight years as Director of Food and Nutrition Services for the Hernando County School District, Lori Drenth has turned a lackluster child nutrition program into a model program. She has taken Hernando County’s program fund balance from $470,000 to more than $1.9 million with tighter inventory control on food cost and usage as well as increased participation. Her breakfast participation is up 38% and her lunch participation has increased 25%. A focus on nutritious, high-quality meals for reimbursement, limited a la carte options and facility improvements are keys to Lori’s fiscal success. She also established meals-per-hour benchmarking and decreased labor hours to reduce the labor ratio to approximately 41% from 45%. She is a registered dietitian, Level 3-certified through School Nutrition Association, and a credentialed member of the national School Nutrition Association.
